Cupcake Time

Yesterday I suddenly became filled with cupcake fever - I think a lot of it is due to a friend on facebook posting very tempting pictures of her own creations.  So my natural reaction was to take a trip to Tesco to stock up on cake decorations as this would certainly be the motivation I needed to start baking again.  I wasn't impressed with the choice and ended up buying a tub of everything (that's how little choice there was).  However they did have a large range of Betty Crocker stuff.  Now, I've never used pre-baked stuff before but I've heard a lot of good things about Betty Crocker so I decided to give the chocolate fudge icing a go.  It comes in a tub ready to simply be spread on the cakes and I have to say is the most amazing topping I've ever had on a homemade cake.  I do have the recipe for my own fancy icing which I'm just dying to try out - perhaps over Easter break as I don't think I have the energy to make the cakes (even though they only take 10mins to whip up) and icing.  Anyway, I think you'll agree that my cakes turned out rather fine and everyone enjoyed them greatly in class today (I took them in as a treat for everyone as I didn't feel justified in eating all of them).

Just so you know, while creating this post I did the washing up and had a shower rather than waiting around doing nothing while the photos uploaded - I'm learning how to utilise my time!
